New American-Themed Restaurant to Debut at The Trailhead

The Sparrow and Tacos & Craft are expected to open by the end of the year

A brand new American-themed restaurant, The Sparrow, will debut later this year in Peoria at the corner of Happy Valley Road and 83rd Avenue.

The new restaurant is the first of two dining concepts announced for the upcoming project called The Trailhead, a new mixed-use development in Peoria’s Happy Valley corridor, according to Phoenix Business Journal. Plans include $100 million worth of new buildings, a $65 million shopping center with a 63,000-square-foot Safeway, a second Tempe-based Tacos & Craft location, a 350-unit multifamily complex, and a new church. The two restaurants and Safeway are expected to open by the end of 2024.

The Sparrow is the latest from SKY Restaurant Concepts, the owner of Squid Ink Sushi Bar in Peoria. The restaurant offers a unique blend of traditional and fusion sushi, using seasonal ingredients, and served alongside expertly crafted cocktails. At one point, the business owner had two additional Squid Ink sites in Scottsdale and Downtown but had to close. Now, Estes will now embark on a new culinary concept near the Sunrise Mountain Preserve. Customers can expect American-inspired food and drinks in an indoor or outdoor seating and patio space.

The new development is the latest from Phoenix-based developer Pederson Group Inc., with help from general contractor Campbell Development and architect Butler Design Group. The group recently celebrated the project’s groundbreaking on March 6 with the city. Once completed, the Trailhead will have 140,000 square feet of new retail space, with additional amenities such as a water feature, a community garden, and open areas for eating, games, and community events. The neighborhood retail center is about 80% leased, and additional restaurants will be built out as tenants are leased.
