Panini Kabob Grill Coming to Las Vegas in Late 2025

Also in the works: a new tattoo parlor and speakeasy called Down the Hatch

With 25 locations already operating in Califonia, Panini Kabob Grill has “realized that our mouthwatering grilled chicken kabobs have become a craving that just can’t be ignored,” says the kabob shop chain’s website.

Accordingly, the brand is expanding in big way, with several new locations currently in the works, including one that caught our particular attention: a PKG opening at Fashion Show Mall in Las Vegas.

What Now became aware of these plans after finding work permit paperwork submitted to Clark County for a Panini Kabob Grill location: a“4578 sqft full service restaurant and outdoor covered dining patio” at 3200 S Las Vegas Blvd, the address of Fashion Show Las Vegas. What Now reached out to PKG CEO Mike Rafipoor on Friday to ask about the opening. Rafipoor was not immediately available for comment, but the PKG website confirms the news.

Meanwhile, news of another hospitality project has trickled in, this time involving drinks and… tattoos?

In a planned February 11 session, plans will go before the Las Vegas Planning Commission for a speakeasy called Down the Hatch, for which an approval has already been recommended.

“The location will also host a tattoo parlor at the entrance with the speakeasy access to the bar, and full liquor,” says a justification letter submitted by owner Patrick Cummings.

Down the Hatch would open at 1114 S Main Street, Suite 110. Patrick Cummings could not be reached immediately for comment. We’ll be on the lookout for more information.

That’s two very different, but very intriguing additions the Vegas food and beverage landscape.
