Local Lime, an Arkansas-based “Fresh Mex” restaurant, is making its way into Tennessee with a new location coming to Saddle Creek.
This will be the first time Yellow Rocket Concepts expands away from Arkansas, already having locations in Little Rock and Rogers, according to Memphis Business Journal. The group, led by co-founder Amber Brewer, never considered moving outside their home state, but the larger location in Rogers opened up possibilities. Customers can expect plenty of affordable Mexican classics that are naturally vegan and vegetarian-heavy. There is no exact opening date.
“Each plate at Local Lime offers dynamic, flavor-packed fare inspired by Mexican cuisine, Latin American flavors, a hint of Tex-Mex flare, and delicious Arkansas influences,” according to the company’s website. “Our unwavering focus on local ingredients, attention to service detail, and deep Arkansas roots make Local Lime a local favorite.”
Yellow Rocket Concept was launched in 2008 as a way to provide something in between a low-end and high-end restaurant. The group opened the first Local Lime in 2012, focusing on buying produce and meats from farmers in the tri-state area. Since then, Yellow Rocket has opened 14 restaurants throughout Arkansas, including Big Orange Burgers, Zaza Fine Salad & Wood-Oven Pizza, Lost Forty Brewing, Camp Taco at Lost Forty, Bentonville Taco & Tamale Co., and Heights Taco & Tamale Co.
“We started looking for other opportunities with that kind of square footage. We have a lot of friends who live in the Germantown/Collierville area. So, we traveled there and thought [Saddle Creek] would be a great spot,” Brewer tells the Business Journal. “We talked to a lot of people [and asked], ‘What do you guys want? What do you think?’ We felt the burger/pizza thing was pretty well taken care of. We felt like there was a real void in that casual, Cali-Mex-style food. We thought it’d be fun to offer Germantown something that they didn’t have.”
