A Memphis Restaurant Was Cited for Several Violations During a Recent Inspection

The Tennessee Department of Health conducted a routine inspection at India Kitchen on June 9. The restaurant received a score of 75 after inspectors documented multiple priority violations.

India Kitchen serves Indian cuisine in Memphis. Multiple priority violations were observed during the inspection, according to the report.

  • No employee health policy was available during the inspection.
  • According to the report, the cutting board was severely stained with deep grooves. Inspectors suggested to replace the board to avoid bacteria.
  • According to the report, rice was observed at 119°F while cooling and did not meet required cooling standards. The rice was reheated to above 165°F, and staff were instructed on proper cooling procedures. Food items must cool to 70°F within two hours and then reach 41°F or below within the next four hours.
  • Food items on the hot buffet line were not kept at the required hot holding temperatures. The person in charge discarded the affected food items.
  • Improper cold holding was observed during inspection. According to the report, food items must be maintained at 41°F or below.
  • The restaurant did not have a date-marking system in place. Staff were instructed on proper date-marking procedures.
  • The interior and exterior of the microwave were observed to be dirty during inspection, according to the report.
  • Black buildup was observed on the walls at 3 compartment sink. Staff were instructed to clean and sanitize it.

  • Chlorine test strips were not available to verify sanitizer concentrations. The restaurant was instructed to provide test strips to monitor sanitizer levels.
  • Stove tops were observed to be dirty with heavy food debris. The report instructed the restaurant to clean the stove tops to help prevent contamination.
  • Walls and floors in the food service area were dirty. The restaurant was instructed to maintain their cleanliness.
  • The ventilation hood was found dirty and needs to be cleaned.
