Pop-up restaurant Entre Sueños is looking to find a permanent home somewhere in West Town.
Chef Stephen Sandoval recently won the restaurant category of Soho House Chicago’s first entrepreneurship competition. As a result, he earned a six-month residence inside the West Loop club for Entre Sueños, which kicked off on April 20. While he embarks on this residency, Sandoval is actively looking for a permanent space in West Town. Fans of his food will likely see the permanent relocation of Entre Sueños, which translates to “between dreams,” sometime next year.
All of this plays into Sandoval’s dream of opening his own restaurant. The well-respected chef has spent years working on this goal. Born in San Diego, Sandoval received his culinary degree from the French Culinary Institute before joining the opening team for State Bird Provisions. After six years of working in fine restaurants and corporate restaurant groups in California, Sandoval traveled through Argentina and Mexico to discover the cuisines of his heritage.
Sandoval has found himself in New Orleans, Spain, and Chicago, working under some of the best chefs in the world, including Rick Bayless, Susan Trilling, and Albert Adria. This journey has also led him to work for highly acclaimed Michelin starred and James Beard awarded restaurants. Before committing to opening his own restaurant, he worked as the Executive Chef at Leña Brava in Chicago.
“After four years with Leña Brava, he now moves to focus on his own projects and dreams,” according to his website. “Stephen is excited to share his culinary journey with guests by hosting pop-ups and chef’s table experiences. He plans to open his dream project in the foreseeable future.”
