Spirit Elephant Owner Expands With Plant-Based Fast Casual Concept

The Evanston location will be a 2000 sq-ft loft style space

A fast casual spinoff of Spirit Elephant, the highly acclaimed vegan eatery in Winnetka, elephant + vine is the newest endeavor from owner CD Young and hospitality company, Wild Thing Restaurant Group. Opening in both Lincoln Park and Evanston, this plant-based expansion will take the delicious “this can’t be vegan” vegan food to a quick service model featuring sandwiches, bowls and more.

Spirit Elephant’s motto of “Eat plants feel beautiful” is not just a slogan, but represents the idea that eating plant-based is a simple way to positively impact the planet and all its inhabitants, and that feels beautiful. “Plant-based eating is a direct way that we as individuals can help improve the health of the planet and everyone on it,” said Owner CD Young in a statement. “According to the Vegan Calculator, which uses research from Scientific American and other academic sources, one plant-based meal saves roughly 360 gallons of water, 13 pounds of grain, 10 square feet of forest, and 6 pounds of CO2 and of course helps animals. Anyone who enjoys a meal with us not only has a wonderful dining experience, but also can feel good about its ripple effects.”

Spirit Elephant’s Cauli-Wings will be a feature on the menu, mixed with new, quick service favorites including burgers, hand-battered zero clucks chicken sandwiches, salads, rice bowls, shakes and smoothies.

elephant + vine will be a fresh, modern ambiance with an industrial design. The Evanston location will be a 2000 sq-ft loft style space featuring exposed pipes and dozens of plants to enliven the area with vibrant green hues. Sharing the same design & décor, the Lincoln Park space will be nestled in a 1935 sq-ft space adorned in a sleek and linear design with natural woods and metals running throughout.

elephant + vine will have two locations: 719 Church Street, Evanston, Illinois 60201 and 2315 Lincoln Avenue, Chicago, Illinois 60614. Hours of operation are 11 am – 9 pm, Monday – Sunday. The newest location is opening its doors in Lincoln Park on Tuesday, May 3rd.
