According to a Chicago Business article, Boka Group and Brian Lockwood have partnered to open a new concept called Gingie at 707 N Wells Street.
“This summer, Chef Lockwood and Boka Restaurant Group will open Gingie at 707 N. Wells, an ingredient- and technique-driven American restaurant with an accessible menu housed in a stunning space designed by Anna Filatov (Ciccio Mio, Armitage Ale House),” a press release sent to What Now Chicago states.
“The team sought to create a space that feels timeless, using art to tell its story alongside hand-carved oak trim, marble, lush fabrics, and bold patterns. Both Gingie’s menu and aesthetic embody comfort and understated luxury.”
“Gingie’s broad menu is divided into shareables, specialties, and pastas, drawing inspiration from
global influences. One standout dish is eggplant with young ginger, miso-egg, and shiso. The eggplant is scored almost all the way through, brined, fried, and poached in an aromatic soy-vinegar broth.”
“Egg yolks are cured in miso and smoked, while the scored sections of the eggplant are filled with roasted garlic purée, burnt eggplant purée, and pickled young ginger. It is lightly grilled from the bottom, warmed through above the hearth, then topped with grated miso-egg yolk and served with a sauce of reduced tomato water infused with shiso and ginger. The result? A complex, flavorful, and meaty dish—all while being vegetarian.”
“Other menu highlights include: Tomato with peekytoe crab, coriander, Calabrian chili, and bonito cream-Spicy, fresh, full of umami, yet cooling at the same time. Potato-parmesan frico, sour cream & burnt allium, smoked trout roe, baked gnocchi. Wisconsin cheddar, summer truffle, chive blossom, and salmon mi-cuit, chantarelle, green tomato, shelling beans, spinach, ramen broth.”
