Scheduled for a February 2023 start date, French-trained chef Jeremy Dumont will open Fev’Co Chocolat in the Chef Ready commercial commissary at 1468 S. Cherokee St., per a Denver commercial permit application.

“The concept is to mainly sell to hotels/caterers for banquets, amenities, etc., but I will also have retail activity with a website,” Dumont wrote What Now Denver in an email. “Consumers can order nice boxes of chocolates, truffles, bars, spreads, etc. to have shipped, or pick(ed) up at Chef’s Ready.”

Dumont is a self-described “highly-skilled French pastry chef.” Training under chefs at Michelin-starred restaurants and five-star hotels, Dumont worked in elite kitchens in Paris, London, and New York City. Now his fine French chocolates will grace the Mile High City, produced with rare, decadent ingredients like French Normandy butter.

Dumont plans for Fev’Co Chocolat’s website and social media to launch when the store opens its Platt Park doors a couple of months into the New Year. The idea, Dumont stated, is to develop the tiny, 300-square-foot space quickly enough to move into brick and mortar retail space in the next year or so. Until then, customers will have to order their delicate, elegant chocolate morsels online.
