Hospitality Trio Strikes Again: Emilia Comes from Restaurant Olivia Owners

The renowned trio behind Restaurant Olivia has announced their latest endeavor: Emilia. Chef Ty Leon, Heather Morrison, and Austin Carson will embark on a journey to open a new eatery at 3615 Delgany St., Westword reports

Building on their success with Restaurant Olivia, the team will bring the flavors of Italy to RiNo’s gastronomic scene. Emilia is slated to open its doors in 2025, recent news articles state. It will occupy a spacious 3,700-square-foot property on the ground floor of The Current, a forthcoming office building at the address. 

A company representative told What Now Denver that details are not available right now about the status of the project. The business encourages community members to stay tuned in to Emilia and Restaurant Olivia’s social media channels for updates.

Following the transition of Cafe Marmotte into the successful Restaurant Olivia in 2020, the owners’ reputation has only grown. Leon’s expertise in crafting exquisite pastas, Morrison’s adept management of front-of-house operations, and Austin Carson’s innovative beverage program, have made them a winning team.

The name of the coming venture is a nod to Italian cuisine with a special emphasis on the Emilia-Romagna region. Its menu will feature a selection of antipasti, handmade pastas, and delightful dolci, including housemade gelati.
