Roxy’s Diner will be undergoing an expansion of menu options and improvements to the current space at 462 N 36th St in the Fremont area, confirmed by the owner Christia Lowdermilk and regional manager Manda Anderson.
“We’re undergoing a series of small-scale enhancements to refine the dining and drinking experience. We are diligently working to revamp the menu, simplify certain aspects, and elevate the overall quality. Exciting additions, such as fresh smoothies, milkshakes, and authentic espresso coffees, are just a few ways we are expanding,” Lowdermilk told What Now Seattle, “While the fundamental concepts of the establishments are staying, we are eager to build upon the existing foundation and create an even more fulfilling experience for our guests.”
“Patrons can also look forward to a new and improved menu that is taking advantage of our seasonal vegetables and fruits, we are trying to go a little more healthy and still hosting all the die-hard classics. We have lots of plans in the works for improvements to all of the space, including a freshened-up overall look and aesthetic. We want to make everyone feel at home when they walk through the doors of all three of our locations,” Manda also added.
Roxy’s Diner has been in business for about 20 years, proudly claiming healthy and heart fare inspired by New Jersey Great Diners. Patrons can enjoy all-day breakfast options, or their well-known Reuben sandwich, according to their company website.
