The Restaurateur Behind Project Pollo Opening New Concept in San Antonio

Entrepreneur Lucas Bradbury of the now-shuttered concept Project Pollo plans to debut a new fast-casual restaurant in San Antonio, EVO.

Coming to 2501 Nacogdoches Road, taking over the former home of Earth Burger, the eatery will land near establishments such as Bangkok 54 Thai Cuisine, La Marginal, and Laguna Madre Seafood Company.

“We are entering a time where conscious consumption is a priority however we have seen a tremendous gap in affordability matched with quality – we think we are a front runner in this category and are excited to serve San Antonio,” Bradbury shares in the press release.

On the menu, locals can expect to find build-your-own and signature protein bowls, wraps, and sourdough pinsa — “a type of pizza that is lighter than traditional iterations,” according to MySA.

While EVO is holding a soft opening on February 6, the Journal reports that the “grand opening is planned for a later date in March.”
