Jersey Mike’s Subs is preparing to join the growing retail and dining lineup at Town East Crossing in Castroville, with a proposed $415,000 tenant build-out at 1762 U.S. Highway 90 East, Suite 105, Castroville, TX 78009.

According to Texas Department of Licensing and Regulation (TDLR) records, the project involves a 1,463-square-foot tenant fit-out for a new Jersey Mike’s restaurant. The development is listed as an addition to an existing building and is privately funded by the tenant.

The project is scheduled to begin construction on November 18, 2026, with an estimated completion date of January 15, 2027. It is currently listed as registered in TDLR records. These dates reflect the projected construction schedule and do not confirm the restaurant’s public opening date.

The restaurant will join Town East Crossing, a retail development at the U.S. Highway 90 address. The shopping center has been progressing with several planned tenants, including Quality Urgent Care, Imagine Dental and Mi Casa Child Center, according to local reporting by the San Antonio Express-News.

Jersey Mike’s is known for its East Coast-style submarine sandwiches, prepared with meats and cheeses sliced fresh to order, fresh vegetables, and bread baked in-store throughout the day. Customers can also order their sandwiches Mike’s Way, with onions, lettuce, tomatoes, an olive oil blend, red wine vinegar, and spices.

The menu features hot and cold subs, including options with roast beef, turkey, ham, Italian meats, grilled chicken, and cheesesteak. The chain also offers wraps, salads, sides, drinks, and catering options.

Founded in 1956 as Mike’s Subs in Point Pleasant, New Jersey, the brand began as a neighborhood sandwich shop on the Jersey Shore. Peter Cancro, who had worked at the original shop as a teenager, purchased the business in 1975 at age 17. He began franchising the concept in 1987, helping grow it into a national restaurant brand.

Today, Jersey Mike’s has more than 3,300 locations across the United States and Canada, according to the company’s investor information. Franchisees independently own and operate its restaurants.

The company has not yet announced further details about the Castroville location, including its franchise operator, menu pricing, hours, or official opening date.
