AB Indian Cuisine underwent a regular health inspection on May 5, in which several major violations and repeat violations were reported. The violations marked are to be corrected immediately and others are to be resolved within the given time frame.
Violations Listed in the Report
The inspection report began by stating that a food manager’s certificate was missing at the facility, marking a repeat violation. Not all employees who were handling food had valid food handler cards on site. These issues need to be resolved within 15 days, the report said.
Employees washed their hands without removing gloves, violating hygiene standards. Paper towels were missing, and the sink was blocked by a mop bucket and utensils, which was noted as a major violation. Corrective actions for these violations were taken during the inspection.
In issues concerning food storage, cooked rice was seen left at 43°F (above the required 41°F) on the prep table. Gravy that was prepared 3 hours before the inspection was left on the counter at 107°F. The rice and the gravy were moved to coolers as a corrective action.
Raw chicken with fresh greens, raw meat with spring rolls, cooked shrimp and raw shrimp, Sweets and raw chicken, were seen stored together. The inspectors instructed the team to immediately reorganize the walk-in freezer and discard any food items that may be contaminated.
Food boxes were placed directly on the cooler floor, the report noted. Furthermore, unlabeled food containers were seen stored near a large food machine.
Used gloves and towels were observed to be placed on clean plates and a scoop spoon was seen in dirty water, posing a risk of cross contamination.
About 100 mouse droppings were found under the shelves, marking a major violation. Greasy containers, unclean floors, trash on equipment, black grease on pans and stoves, and dirty cloths were left out on the premises. Furthermore, no sanitizer buckets were seen during prep, marking a violation that was to be resolved immediately.
Follow-Up Scheduled
AB Indian Cuisine received a yellow card following the inspection on May 5, as per the report. Given the violation of the California Health and Safety code, the restaurant will face a reinspection within 24 to 72 hours. To reinstate the green card and avoid other adverse consequences, the establishment will have to resolve all the major violations.
