One of the top cookie chains in the nation will soon be enjoying a full-circle moment. Insomnia Cookies started life on the University of Pennsylvania’s campus and this summer the venerated sweet company is opening a new storefront at the ivy league institution, reports the Philadelphia Business Journal.
The bakery will be bringing a very different energy and purpose to its new 3730 Spruce Street home. The space previously housed Penn Campus Hair Skin and Nail Salon, so a cookie shop is a pretty radical departure.
An opening date more exact than “this summer” is not presently available, however the chain is actively recruiting staff for its newest Philly bakery.
While Insomnia has spread to more than 300 locations across the United States, the City of Brotherly Love has always been home. The company was founded in 2003 by Seth Berkowitz, who was a University of Pennsylvania student at the time of his sweet discovery. Insomnia started as a way for students to fuel late night study sessions but quickly spread beyond campus borders.
The menu features a range of classic cookies, brownies, ice cream, and cookie sandwiches.
