Super Yummy Mongolian Stir Fry & Sushi is expanding with its fourth location, and is preparing to take over a sizable space at 7615 Farm to Market 1960 Rd W. While Owner Eric Ye has confirmed the project, no additional details about the location have been made public just yet.
Based on a recently filed commercial permit, the upcoming spot appears to be undergoing a major transformation. The documents list a $700,000 interior remodel that will revamp 5,600 square feet of existing restaurant space. The scope notes it as a renovation and alteration, which involve redoing the shuttered Kirin Japanese Seafood & Sushi Buffet to fit this stir fry and sushi restaurant.
Although Ye has not disclosed further specifics, it is speculated that it will follow suit along its previous Super Yummy siblings. Provided it remains the same, it will serve a broad range of diners in the busy corridor that runs through Willowbrook and beyond, especially with the growing demand for Asian fusion and quick-service customization.
Construction is expected to begin mid-summer in July 2025 with the project completion slated for January 2026.
