Chef Cory Vitiello is opening The Frederick, a new restaurant in Toronto’s Financial District at 10 Temperance Street, inside the historic Dineen building at the corner of Yonge and Temperance Streets.
The Frederick will occupy a 95-seat space on the main floor of the Dineen building, with an outdoor patio on Temperance Street, according to Toronto Life. The restaurant is named after Frederick Henry Herbert, the architect who designed the building. It will be located below Vitiello’s sister restaurant, Chase, which occupies the top floor. Vitiello said the menu is designed with the neighborhood in mind, offering a style of dining he feels is underserved in the downtown core. Vitiello tells What Now Toronto that this new restaurant is expected to open in late August 2025.
When the restaurant opens, customers can expect dishes like house-made pappardelle with braised veal cheek topped with toasted sourdough, parsley, and Parmesan, as well as the much-anticipated Harbord Room burger — a thick, juicy patty meant to outshine typical smash burgers. Vitiello also emphasized the desserts, describing them as “dramatically oversized” and a particular point of pride.
“Just like I did with the Harbord Room, I really thought about the neighbourhood when I came up with the menu,” Vitiello tells Toronto Life. “I’m not looking to stamp my name here—I’ve already established myself. The style of dining I’ve always worked in feels really underserved in the core, and it just happens to be the way I really love to cook and eat.”
