Ruby’s, a takeaway-focused concept from the team behind Artie’s and Rosales Diner, is preparing to open at 193B Ottawa Street North, next to the historic Avon Theatre.
The new eatery is targeting a mid- to late-August 2026 opening, according to Urbanize. The approximately 400-square-foot space will focus on grab-and-go service, allowing owners Roman Kremnev and Leo Tsangarakis to expand their sandwich offerings while serving customers in Hamilton’s east end. Tsangarakis tells WhatNow Toronto that the team is planning to open mid-August.
The duo also operates Artie’s on Locke Street and Rosales Diner on Dundurn Street. While Artie’s has become known for its Italian bakery, café, and house-made focaccia sandwiches, Ruby’s will introduce a menu featuring breakfast sandwiches familiar to Artie’s regulars, along with hot paninis and focaccia sandwiches exclusive to the new location. Additional menu details are expected to be announced closer to opening.
