No BS Donuts Bringing Old-Fashioned Doughnuts to Easton in August

The shop will serve a varieties of fresh nightly-made doughnuts along with muffins, cinnamon rolls and coffee cake.

An old-fashioned doughnut shop is opening in Easton this August. No BS Donuts, owned by Bill and Siobhan Ciotola, will open at 2439 Nazareth Road, serving fresh doughnuts made daily.

The name No BS is a nod to the couple’s initials, but Bill said it also reflects their classic approach.

“We’re going to sell old fashioned doughnuts. The fluffy ones that you get to bite into rather than the cake ones,” Bill told What Now Philadelphia.

What sets No BS apart from other doughnut shops is its focus on the risen doughnut.

When making risen doughnuts, Bill said to begin by mixing the dough with a dough hook in a large mixer. Set it aside for 30 minutes and let it rise. Afterward, roll the dough gently, smoothing out any air pockets. Cut the doughnuts to even weights, then let them proof for 35 minutes. Fry them until golden brown, allow them to rest and cool and finally, dress them with a choice of toppings.

No BS plans to offer 26 varieties of doughnuts. Bill’s favorite is the chocolate-frosted with Holland cream filling. The shop will also serve blueberry and pineapple muffins, eclairs, cinnamon rolls and a family recipe coffee cake passed down through generations.

Every doughnut will be made fresh nightly, with no day-olds kept in the shop. Any unsold doughnuts will be donated to local emergency shelters and fire stations.

“There’s nothing that can replace how fresh it is to make, fry and decorate donuts every night,” Bill said.

While the shop won’t offer a full coffee program, it will have a self-serve station with two size options for customers to pair with their doughnuts.

“I was bound and determined to try and open up a place and give people just what they wanted,” Bill said. “It’s exciting. I’m excited that it can actually be done. We’ll be here for people and just keep improving on everything that we have.”

This will likely be the first of several No BS Donuts locations, as the couple hopes to expand into the Lehigh Valley and New Jersey in the future.
