Adalina Prime, a new steakhouse from the team behind Adalina, is set to open in Fulton Market on Tuesday, September 2. The new concept is the latest project from the team behind Adalina in Gold Coast, led by Chef and Partner Soo Ahn.

New Chapter for Adalina Team in Fulton Market

Adalina Prime spans 10,500 square feet and boasts striking features, including lush greenery, open spaces, rich accents, and sculptural arches. Designed by the famous firm Dunne Kozlowski, the space showcases a spacious dining room centered around an open exhibition kitchen.

The interior features painted murals and a dramatic two-story wine cellar. The restaurant offers private dining options for groups ranging from 20 to 200 guests.

Located on 360 N Green Street, Adalina Prime will be open Monday through Thursday from 4 PM to midnight. The restaurant operates from 4 PM to 1 AM on Fridays, 3 PM to 1 AM on Saturdays, and 3 PM to midnight on Sundays.

Adalina Prime’s menu honors the tradition of classic Chicago steakhouses while introducing a refined global influence.  The highlight is its premium steak program, which features full-blood Wagyu beef sourced from the famous Miller Wagyu Ranch in Illinois.

It is complemented by fresh seafood and expertly charred vegetables. The menu brings Japanese and Australian cuts, reflecting its global approach to food. Some standouts include delicate potato rosettes filled with molten cheese and truffle shavings, and cured and roasted carrots à l’orange.

The restaurant also offers the interactive “salt library,” where guests can try about a dozen flavor pairings of red wine, porcini, and vanilla tailored to their entrée. Playful menu items include cotton candy and oversized chicken nuggets topped with caviar.

The menu also includes vegetarian dishes like locally-sourced charred Lion’s Mane mushroom steak. Guests can enjoy other comfort bites like Foie Gras–Sauced Half Chicken and Fulton Fried Steak.

Adalina Prime’s cocktail program highlights global flavors and inventive pairings. Signature cocktails include the Reina del Fuego with tamarind, mango, and smoky mezcal; the Golden Hour with passionfruit, aperol, cinnamon, and coconut-washed tequila; and Silk Over Smoke with lychee, strawberry, citrus, and vodka.

The wine program at Adalina Prime is equally impressive, featuring a curated selection of rare reserve bottles, Old World staples, and standout New World finds, all designed to complement the menu. With its steak program, global influences, and expansive bar menu, Adalina Prime adds a new chapter to Fulton Market’s dining scene.
