The person in charge at the restaurant was not able to produce a valid Philadelphia Food Safety Certificate. Employees were found cleaning their hands in a sink used for food preparation. The handwashing sink in the food preparation area was found to be inoperable.

Health inspectors instructed that employees should not wash their hands in sinks used for food prep, dishwashing, or for dumping mop water and other waste.  No chemical sanitizer was seen being used on either the equipment or the utensils after washing and rinsing them.

Inspectors found potentially hazardous ready-to-eat foods stored for more than 48 hours without proper date marking. The health inspectors observed visible physical evidence of fly activity throughout the facility. Food employees were seen not wearing or wearing ineffective hair restraints, such as nets, hats, or beard restraints.

Moist wiping cloths were observed lying on 3-basin sinks and not stored in a sanitizing solution. Warewash sinks were seen with old food residue in compartments and were not cleaned and sanitized before use.

Officials instructed the restaurant to clean and sanitize all floors, including the kitchen and storage areas near the back entrance. The report noted that a mop and broom were stored in a way that prevented them from drying properly. Toilet fixtures and floors were observed to be visibly unclean.

Follow-up Inspection

Fallin off the Bone Wings West can request a re-inspection after it has corrected all the violations as noted in the assessment report. If these violations are not fixed, the restaurant could lose its health license and face legal action.
