Denver-based Blue Sparrow Coffee is reportedly preparing for another expansion, and this time it has its sights set on the Tabor Center skyscraper in downtown Denver. According to the Denver Business Journal, the company is working through regulatory approvals for plans for a coffee bar at One Tabor Center, 1200 17th St.
City records show the local brand intends to renovate a storage space on-site to make way for a 1,000-square-foot cafe. It will be a grab-and-go style counter with a few spots for seating and will be directly accessible from both the Tabor Center lobby and the street. Architect Nick Seglie of Gensler is listed on project documents.
The business has not yet signed a lease, but if this spot does not go through, it intends to look for another space in the same general area downtown. If completed, it would become Blue Sparrow Coffee’s fourth outpost, joining its locations on Platte St. and in RiNo and Capitol Hill — the latter of which was its latest expansion, which What Now Denver covered last year.
Across its locations, Blue Sparrow has become known for its coffee, espresso drinks, matcha, teas, and kombucha, along with pastries from local baker Hearth Bakery. Signature items include the Flat White, Organic Japanese Matcha Latte, and a rotating selection of international coffees and cold brews, its menu shows.
