Eleven Hospitality Group at Work on The Bend’s Butcher & Thief and More

Signs point to the long-awaited opening coming soon

Remember the long wait for the Bend? It felt like years—it was years—before it finally launched, but launched it has, at least partially. You can already check out restaurants like Evolve Brewing by Aces and Ales and the Great Greek.

One long-awaited concept still in the works at The Bend is Butcher & Thief, “a neighborhood steakhouse and bar bringing exceptional value back to the steak and wine dining experience.”

And signs point to an opening on the way. An Instagram post published a little earlier this year showed the Butcher & Thief team at work on developing its menu in a test kitchen space. Meanwhile, this week, What Now found licensing paperwork submitted to Clark County showing Butcher & Thief opening at 8670 W Sunset Road, Suite H-100.

What Now reached out to Cory Harwell, President of Eleven Hospitality Group, the company behind Butcher & Thief, to ask about plans of the rollout. Harwell was not immediately available for comment.

Meanwhile, Butcher & Thief is not the only concept Eleven Hospitality is developing for Las Vegas. It’s also at work on Federal Hill Fish & Oyster Company, a “modern & vibrant oyster & seafood restaurant debuting soon in the Arts District, Downtown Las Vegas.”
