Roma Roma Pizzeria to Open Permanent Capitol Hill Spot

The pizza joint will serve pizza al taglio and curated drinks in the former Rachel’s Ginger Beer space.

Seattle’s Capitol Hill neighborhood will get a permanent pizzeria this winter, as a popular pop-up secures a longtime home.

Roma Roma, run by chef Forrest Brunton, his wife Renee, and brother Colin, will take over the former Rachel’s Ginger Beer space at 1610 12th Ave., the Capitol Hill Seattle Blog reports.

“After years of pop-ups, planning and space hunting, the finish line is in site. The build out is underway, and Roma Roma is only a couple short months from opening. See you soon, Capitol Hill!” the shop shared via Instagram.

The pizzeria will serve pizza al taglio, or “pizza by the cut” in Italian. Baked in large pans with naturally leavened dough, the pizza is sold by weight, letting customers choose the exact size of slice they want.

Roma Roma will offer eight to ten pizzas daily, including variations of its slow-rise crust. Customers will order at a counter, with a long display case showcasing the fresh pies, the outlet reported.

Standout pizzas include the Heirloom Pumpkin, topped with roasted pumpkin and winter squash, brown butter walnuts, sage, mozzarella, ricotta and aged balsamic, and the classic Peppori, with mozzarella, pepperoni cups and red sauce on a New York Sicilian crust. At past pop-ups, Roma Roma has also offered Philly cheesesteak, spicy broccoli and Spicy Boar Bolognese pizzas, according to the Instagram page.

The pizza joint will serve curated drinks to complement its pizzas.

The team has not announced an official opening date but hopes to debut in January. Follow along on Facebook and Instagram for updates.
