After closing earlier this year,  Rosebud’s is preparing for a return under the guidance of chef and founder Josh Dalton. Dalton, known for 1808 American Bistro and Speck Italian Eatery, confirmed that he will help oversee the concept while stepping back from daily operations. A new team will manage the relaunch.

Rosebud’s originally opened as a casual, chef-driven hangout that blended elevated cocktails with a relaxed bar atmosphere. Its mix of creative drinks, approachable food and late-night energy helped it develop a loyal following among Delaware residents and visiting Columbus diners.

The announcement of its closure in January drew a strong response from the community, with many calling the loss a blow to downtown Delaware’s nightlife. The news of its return has generated the same level of attention, this time with excitement.

While an exact opening date has not been released, the restaurant’s Instagram account has begun sharing early updates as preparations move forward. The reopening is expected to maintain the same character that made Rosebud’s stand out, while giving the space a refreshed start under the new operating team.
