Something sweet is coming to Columbus‘ Short North neighborhood as Peasant House Syrup Co. prepares to open its first brick-and-mortar location in early 2027.
The locally owned artisan syrup company, founded by Ariel and Jacob Ciampa, specializes in small-batch syrups made with carefully selected ingredients and creative flavor combinations. Its offerings include seasonal varieties such as Charred Marshmallow, Salted Sage Maple, Sugar Cookie, Hazelnut Praline, and Bourbon Vanilla.
In an interview with 614Now, the founders shared that the upcoming space will combine a retail shop, cafe, and event venue. While the company’s existing retail partnerships will continue, the new storefront will also introduce exclusive flavors available only at the shop.
The cafe will give visitors an opportunity to see part of the syrup-making process firsthand, with production taking place on-site. The founders envision an experience similar to visiting a distillery, where customers can enjoy a coffee, browse the products, and watch how the syrups are made.
The business began as a hobby after the couple purchased an espresso machine and started making coffee at home. When Ariel became dissatisfied with commercially available coffee syrups, Jacob, a chef with 15 years of experience, began making them from scratch. That experiment eventually grew into Peasant House Syrup Co.
Beyond shopping and enjoying coffee, the new location will offer hands-on syrup-making classes. Participants will have access to hundreds of flavor possibilities, guidance from the company’s team, and an opportunity to create a personalized syrup to take home. Jacob described the experience as, “It’s like a candle-making class and a cooking class all in one.”
Although coffee is a major part of the concept, the company’s syrups can also be used in cocktails, mocktails, matcha, baking, and other recipes, offering customers different ways to incorporate the flavors into their everyday routines.
Peasant House Syrup Co. is targeting an early 2027 opening for its Short North location. The exact address has not yet been announced, but the founders are expected to share more details as the project progresses.
WhatNow will continue to follow the project and update this article as more information becomes available.
