Poke House, a fast-casual franchise serving fresh, sustainable Hawaiian poke, is exploring a potential new location in Lathrop.

The company’s expansion into Lathrop would be led by franchisees Kevin and Irene Rosales, who are evaluating several sites in the city and nearby communities, including Manteca, Ripon, and Ceres. While no lease has been finalized, the Rosales tell What Now San Francisco that they are prioritizing Lathrop for its growing population and market potential. This will be one of many new locations in Northern California for the company, which is also developing sites in Santa Rosa, Brentwood, and Meridian under separate franchise owners. Customers can expect the brand’s signature menu of fresh poke bowls, handrolls, and customizable options, all made with sustainably sourced fish and daily-delivered produce.

Founded in 2016 with a single San Jose location, Poke House has grown to more than 70 signed locations nationwide. The brand has expanded rapidly in California, opening new restaurants in Los Angeles, Santa Barbara, San Diego, and Pleasanton, with additional sites in Georgia, Arizona, Florida, Oregon, and Nevada planned for 2026.

Northern California remains a key growth area, with several locations under development by separate franchise owners. The franchise model includes hands-on training at a corporate-owned location, followed by on-site support once a restaurant opens. Franchisees also receive guidance in marketing, vendor relationships, and daily operations to help establish strong local followings while maintaining brand consistency. The concept combines a health-focused menu with an easy-to-operate business model, fueling Poke House’s rapid expansion.

Menu offerings include signature bowls, such as the House Salmon, featuring Scottish salmon, edamame, cucumber, green and white onions, masago, citrus ponzu, and house-made sriracha aioli. Other items include Crispy Shoyu Chicken, spicy tuna handrolls, and build-your-own bowls with fresh toppings and house-made sauces.

With a focus on sustainability and community, Poke House aims to expand thoughtfully in new markets. Lathrop offers an opportunity to bring the brand’s California-inspired poke concept to a growing Central Valley community while maintaining its commitment to fresh ingredients, quality, and consistent dining experiences.
