The Hat is bringing its world-famous pastrami dip sandwiches to the Valley this spring. According to the Review Journal’s Neon blog, the new Southern California quick-service restaurant is expected to open at 6215 S. Rainbow Blvd. in Spring Valley.
Construction is underway, and The Hat website even has the location listed as opening in spring 2026.
What started as a roadside stand in Alhambra, California, in 1951 has grown into a booming phenomenon, all due to the brand’s famous pastrami dip sandwiches. The family-owned eatery is known for serving up huge portions and high-quality, thinly sliced meat. The location was saved from demolition in 1981 by brothers Joe and Corky Conzonire, who purchased the restaurant and expanded it to multiple So Cal locations.
There are now 11 The Hat locations in So Cal, with spots in Los Angeles, Riverside, Orange, Ventura, and San Bernardino County. The location to open in Spring Valley will be the first The Hat restaurant outside of California.
Besides the famous pastrami sandwiches the small chain is known for, The Hat cooks up and dishes out hot sandwiches, cold sandwiches, burgers, hot dogs, and a host of sides and beverages.
Joseph Conzonire Jr. (who, because of the name, we can only assume is Joe Conzonire’s son) is the Vice President and Chief Financial Officer of the establishment. What Now Las Vegas reached out to the Conzonires, but did not hear back by the time of this publication.
Rumblings about the pastrami chain coming to Sin City surfaced about six years ago the project was never completed.
Now on track, you can expect The Hat, and its famous pastrami dip sandwiches, to make its debut in Valley 6215 S. Rainbow Blvd. in Spring Valley this spring.
