Mexican restaurant Tacos Ay Ay Ay is set to open in Boulder, according to a business license application.

This is a sister location to the first Tacos Ay Ay Ay in Lafayette. Founded in 2016 by Juan Eduardo Pantoja Galvez, Tacos Ay Ay Ay is a fast casual Mexican restaurant that offers a wide variety of street food — like their prawn cocktail ( or beef tripe soup — not just tacos.  Though by all means, do get their tacos, which you can order with a wide variety of fillings like asada, chorizo, tripe and tongue. 

The new location in Boulder will feature the same food options as the original Lafayette location, but it will also offer bar service in addition to the usual agua fresca they serve.

The upcoming restaurant is set to open in the corner space on 2845 28th St., anchoring a small shopping plaza off the highway. The large space housed La Mariposa Restaurant and Margarita House, which closed in late 2025. 

Tacos Ay Ay Ay in Boulder does not have an opening date as of yet.
