Grab a glass of milk, Memphis, hot and fresh cookies are nearly ready to come out of the oven. Insomnia Cookies has been issued vital permits for its new area storefront, with several more under review.

The Philly-based cookie bakery was first proposed in November of last year and in the intervening months has become less theoretical and more of an inevitability. The 7444 Winchester Road storefront has been granted a commercial mechanical permit and a commercial electrical permit from the Memphis and Shelby County Division of Planning and Development. A sign permit is currently under review, suggesting an opening is getting closer.

Memphis locals with sweet teeth have ample reason to be excited to welcome Insomnia Cookies. The Philly brand-well worth losing sleep over-was founded in 2003 by at-the-time Penn student Seth Berkowitz as a way to fuel late night study sessions. The delicious baked treats were such a hit that the concept expanded and now has more than 350 worldwide locations.

Future Memphis cookie monsters can look forward to choosing from a wide range of sweet treats, including cookies both traditional and innovative, cookie sandwiches, ice cream, and cookie cakes-if you can dream it, Insomnia can make it into a cookie.

What Now Memphis has reached out to leadership for further opening details and will update readers as information becomes available.
