A bakery and deli is arriving soon in the town south of Lansing.
From their social media, the owners of Simply Stacy’s Bakery & Deli are bringing a breakfast and lunch concept to downtown Eaton Rapids at 115 S Main Street. This will be a new spot to grab a coffee or sandwich while walking down the main drag. Co-owner Dave Crawford told What Now Detroit they intend on opening sometime later this month after inspections are finished.
The new restaurant is named after one of the owners, Stacy VanElls, who is a baker in the area. She and the staff had talked a year ago about bringing a new bakery and deli to Eaton Rapids, but it didn’t pan out at the time. Last July, the building became available, and preparation of the new space began.
A couple sandwiches already listed like The Gambino with roasted turkey, salami and pepperoni with provolone, lettuce, red onion and pepperoncini on ciabatta bread. While Simply Stacy’s will focus on sandwiches and pastries, unique sweets will be served as well including chocolate-covered strawberries. Cinnamon rolls, cakes, cookies and cupcakes are all options currently being prepared for future customers.
“There’s nothing we can’t do,” Crawford said.
Eaton Rapids is about an hour-and-a-half west of Detroit and is known as Michigan’s “Island City” due to the downtown being surrounded by the Grand River. The storefront is across the street from Abie’s Bar and was formerly a video game rental store called Movie Market. Crawford said the space is perfect to fit a deli portion along with the bakery.
