Zodiac Subs is aiming for an early spring 2026 opening

Zodiac Subs, a New York-style sandwich shop, is opening a new location in downtown Boulder, according to a food plan review filing.

Zodiac Subs was founded by John Aquino in 2020, opening in a small space on 2359 Arapahoe Ave that prioritized takeout and delivery. The second location on 2052 Broadway will give Zodiac Subs more room to stretch its legs. The larger space makes room for additional seating, so customers can hang around to enjoy their food. “This space allows us to better serve the community, offer more room for guests, and expand our presence as a second addition within the city,” Aquino says.

The sandwich shop offers a variety of Zodiac-themed sandwiches like the My Way or The Highway, a turkey, bacon and ranch sandwich, which is a Virgo. Or the Traveler Roast Beef, which is a Sagittarius. Criminally, the tuna fish sandwich is not a Pisces.

According to Aquino, Zodiac Subs is aiming for an early spring 2026 opening, pending approval from the city of Boulder.

“We’re looking forward to becoming part of the downtown neighborhood and contributing to the local food scene,” Aquino says.
