A major multi-level redevelopment is coming to Boston’s Back Bay, and with it a globally acclaimed Greek seafood destination.
Estiatorio Milos, founded by Greek-born chef and restaurateur Costas Spiliadis, is one of two announced dining concepts set to open at Copley Place as part of a sweeping transformation of the luxury shopping destination at 100 Huntington Ave.
Managed by Simon®, the redevelopment will revamp the former Neiman Marcus space and elevate the center’s luxury retail mix with new dining, wellness, and boutique offerings, according to a press release.
Established in 1979, Milos has earned an international reputation for its pristine Mediterranean seafood and unwavering commitment to quality. The Montreal-born brand operates 12 locations in major cities, including New York, Miami Beach, Las Vegas, Toronto, Athens, Dubai, and Singapore, with another outpost on the way in Mexico City.
At the heart of the concept is simplicity. The restaurant is known for showcasing whole fresh fish flown in from Greece, grilled and finished with olive oil, lemon, and sea salt—a refined yet unfussy preparation that has become the brand’s hallmark.
“This next chapter elevates the center’s distinctive luxury retail mix and further cements Copley Place as the definitive destination for luxury shopping and dining in Boston,” reads a statement on the restaurant’s website. “Estiatorio Milos Boston will offer a refined yet approachable Greek dining experience by sourcing the freshest seafood and produce from local fishermen and farmers across Greece and the Mediterranean.”
Milos will debut alongside Miami-born culinary marketplace Casa Tua Cucina, with additional luxury retail, dining, and wellness tenants to be announced in phases. Construction on the redevelopment—which includes a dramatic exterior renovation—is expected to begin later this year, with phased openings scheduled through 2028.

A representative for Estiatorio Milos told What Now Boston that additional details about the restaurant’s design, menu, and opening timeline will be shared as the project progresses.
