A viral bagel shop is set to make its debut in Henderson with a new location.
PopUp Bagels, known for its signature “rip and dip” style, will open an outpost at 1685 E. Cactus Ave., according to an Instagram post.
“NEVADA!!! We played our cards right. Our first location in Henderson coming soon….And we just may have some more Vegas surprises in store soon,” the post read.
The new location will be managed by franchisees Gary Rubenyan, a co-founder of Dave’s Hot Chicken, and Raffi Babaian, the brand’s business and growth strategist, bringing a mix of hands-on culinary and strategic expertise to the venture.
The bagel shop’s philosophy is simple: bagels and schmears. PopUp Bagels offers a menu built around hot, whole New York‑style bagels designed to be torn and dipped rather than sliced or made into sandwiches
Customers can choose from classic varieties such as plain, sesame, poppy, salt and everything, each served fresh from the oven with tubs of cream cheese or butter. The shop always stocks basic spreads like plain and scallion cream cheese, and rotates limited‑edition schmears and flavored butters weekly, with past options ranging from truffle cream cheese to lemon poppy butter and other creative flavors.
The bakery currently operates 30 locations across California, Connecticut, Georgia, Maine, Massachusetts, New York, Pennsylvania, Tennessee and Washington, D.C. The Henderson location will add to the brand’s growing footprint.
