Evanston’s coffee scene is growing as a new addition is planned for 2026.
Haussmann Cafe is a new coffee spot being teased online, coming to the village this year. An address has not been revealed, but it is promising “coffee and snacks” to enjoy. Owner Maxime Bernard told What Now Chicago the opening date is to be determined as the timeline of construction is unknown.
“Classic coffee & snacks. Nothing more. Nothing less,” says the description on their Instagram page.
From a recent social media post, the owners traveled to Paris to gain more insight on coffee and food to be served at the cafe. Based on recent posts, coffees served will include espressos and cappuccinos. Bread like baguettes is being teased as well.
Starting in June, Bernard and staff will begin selling coffee at the Winnetka Farmers Market. This is right in the village’s downtown, 754 Elm Street, and featured over 140 vendors in 2025. It’s located in the Winnetka Metra station parking lot.
An official address for the cafe has not been listed on the Illinois Business Registry website. For more information on Haussmann Cafe and the opening date, visit their Instagram @haussmann.cafe.
