A new retro-style burger joint is preparing to make its Downtown Lowell debut.
On the Bun is slated to open at 120 Merrimack St, confirmed owner Hector Rodriguez, who is launching the concept alongside his wife, Mila Hernandez.

“We’re very excited about bringing On the Bun to Downtown Lowell,” Rodriguez told What Now Boston. “The concept is inspired by classic American burger stands and 1950s diners, but with a modern approach to quality and atmosphere. Our goal is to create a fun, nostalgic space that feels authentic while serving a focused menu built around sliders, fries, shakes, and local draft beer.”
The menu will spotlight smash burgers made using fresh ingredients, alongside hand-cut fries, classic milkshakes, and a selection of creative specialty items. Vegetarian offerings are also in the works, and the couple plans to weave local influences into both the menu and the space itself.

Inside, guests can expect a throwback atmosphere inspired by vintage burger counters, old-school Americana, and elements that pay homage to Lowell’s longstanding character and history.
“We’re excited not only about the restaurant itself, but also about contributing to the continued energy and revitalization of Downtown Lowell,” Rodriguez explained. “We believe On the Bun will be a fun, approachable gathering place for residents, students, families, and visitors alike.”
The team is currently wrapping up the final stages of construction and is aiming to welcome guests in late June 2026. Hiring is currently underway ahead of the restaurant’s debut.
