Fresh ingredients and a contemporary take on classic Italian cuisine are at the heart of what Pasta Viva plans to bring to Mission Viejo. The Irvine-based eatery is preparing to expand with a new location at 27670 Santa Margarita Pkwy. Although an opening date has not been confirmed, a plan review filed with the Orange County Health Care Agency might suggest a late summer debut.
Offering handmade pasta dishes inspired by traditional Italian recipes while embracing a modern approach in the kitchen, Bulgarian siblings Dessi Sarabosing and Boris Mitrev founded Pasta Viva in 2025.
On its website, the aatery describes itself as “more than a restaurant. It’s a family story — one of purpose, reunion, and the joy of creating something beautiful side by side.”
Known for its commitment to authenticity, Pasta Viva prepares its pasta in-house using flour imported directly from Italy. The menu offers a wide range of Italian favorites, the Bolognese and Meatball “Gladiator”, a bowl of fresh house-made fettuccine in a creamy Alfredo, layered with Bolognese sauce, finished in a Parmigiano Reggiano wheel with all-beef meatballs.
Pasta Viva also offers freshly baked Italian focaccia sandwiches, including the Parma, made with Prosciutto di Parma, fig jam, truffle burrata cream, chopped pistachios, and baby arugula lightly dressed with olive oil and rosé vinegar.
