After debuting as a food truck, a local mac and cheese spot has major expansion plans.
Sassy Mac Boys is working on a second location at CherryVale Mall, 7200 Harrison Avenue in Rockford. This follows their brick-and-mortar debut last year in Machesney Park, and owner Donald Czyzyk is hoping to introduce his second restaurant on June 20. Along with the opening, he wants to expand with a franchise model, looking at locations throughout Illinois.
Czyzyk’s business started out as a food truck in 2023, serving up mac and cheese bowls, nachos and milkshakes. A couple of their staple bowls include the pulled pork mac with bbq sauce and crispy fried onions, and the Tex-Mex taco mac with taco seasoned ground beef with sour cream. After opening in Machesney Park, Czyzyk saw the opportunity for growth and began looking into new spaces.
“It just barked up about a month ago,” Czyzyk said. From Rock River Current, he first set up his food truck at Anderson Japanese Gardens in Rockford.
Along with the mall location, he wants to open additional franchised restaurants next year in areas around Rockford. He also said he is open to the suburbs of Chicago and near Madison, Wisconsin. No additional lease deals have been signed yet.
Other food options at CherryVale Mall include China Wok, Cinnabon, Sbarro, Auntie Anne’s, Jammin Jerk Grill and Fresca Mexican Grill. The mall is right off of Interstate 39, on the east side of Rockford.
