Local Tide Chef Planning GoodMart for Old Ballard

The market and dining counter concept is expected to take over the former Kathy Casey Food Studios space

GoodMart, a new concept from Local Tide owner and chef Victor Steinbrueck, is planned for Seattle’s Old Ballard neighborhood, according to reporting from the Puget Sound Business Journal.

GoodMart is expected to take over the former Kathy Casey Food Studios space within the Chopard Block along Ballard Avenue, a location previously associated with 5130 Ballard Ave NW.

While an opening timeline has not yet been announced, previous reporting points to the site as the likely home for the project.

The concept is described as a market and dining counter establishment. Victor Steinbrueck first filed plans connected to the space last year, initially considering the location as a commissary kitchen for Local Tide

More recent mechanical permits filed under the GoodMart name, however, identify the project as restaurant occupancy. Construction is reportedly underway, with Dovetail serving as general contractor and Heliotrope Architects leading the design.

The project marks a new chapter for Steinbrueck, whose Local Tide has become known for Pacific Northwest seafood.

Although his family operated a business at Pike Place Market, Steinbrueck initially pursued athletics before shifting fully into hospitality. He developed his interest in cooking alongside his Chinese Filipino grandmother before working as a personal chef, restaurant server and catering professional across Seattle’s food scene.

After traveling throughout Southeast Asia in 2017, Steinbrueck returned to Seattle inspired by the cuisines and cultures he encountered abroad. He began hosting seafood-focused pop-ups that eventually evolved into Local Tide, which opened its permanent Fremont location in early 2020.

The counter-service restaurant features sustainably sourced Pacific Northwest seafood, including rockfish bánh mì, salmon sandwiches, fried oysters, clam chowder and black cod dishes, while weekend crab rolls have become one of its signature menu items.
