Laurel Owner Preparing New Concept for Capitol Hill

The Capitol Hill cocktail bar will close in June as owner Kate Opatz prepares what comes next

A new concept is in the works for the space home to Laurel at 1500 E Olive Way, according to Capitol Hill Seattle. The Capitol Hill cocktail bar is scheduled to close June 6 as owner Kate Opatz prepares to reshape the space.

Kate, whose Seattle portfolio includes Laurel, Montana, La Dive, Nacho Borracho and Rich Rich, has not yet publicly shared details about the new concept or its opening timeline.

Laurel opened in spring 2025 as a coffee and cocktail destination in the former Crumble & Flake bakery space beneath the Burlingame Apartments. Located beside Opatz’s longtime bar Montana, the concept blended espresso service with cocktails in a compact, European-inspired space.

Over time, Laurel leaned more fully into its cocktail identity. The menu features both house drinks and familiar classics, including espresso martinis alongside cocktails such as the Laurel Collins, Jackson Street Fizz and Flavor Queen. Food offerings include bar snacks and items like caviar bumps.

Named after her mother, Laurel remains among Opatz’s more personal projects and reflects her approach to hospitality and neighborhood gathering spaces.

Opatz has built a varied nightlife portfolio across Seattle, ranging from longtime neighborhood bars to newer cocktail and wine concepts. Montana, located next door to Laurel, has served the E Olive Way neighborhood for roughly 15 years.

Whatnow Seattle reached out to Kate Opatz regarding the upcoming concept. While details remain limited for now, the owner said she is still working on the project and expects to share more soon. This article will be updated as details emerge.
