Grazia Craft Kitchen & Cocktails is preparing to bring its scratch-made Italian cuisine and handcrafted cocktails to the heart of Old Town Fort Collins.
The restaurant is planned for 160 W. Mountain Avenue, inside the historic William S. Hill building. Owner Adrian Hembree told WhatNow Media Group the team recently submitted its plans to the city and is targeting a February 1, 2027 opening, pending approvals.
“We recently just submitted with the city, I would like to be open and operating by February 1,” he said.
The Fort Collins restaurant will build on the concept behind Grazia’s Texas locations while introducing an experience tailored to the Colorado market.
“We operate under Grazia Craft Kitchen & Cocktails. It’s from-scratch Italian cooking with a real serious craft cocktail program. It’ll follow the same soul that I have for my Texas restaurant, but just more tuned for Colorado,” Hembree said.
Guests can expect a menu centered on scratch-made Italian dishes paired with an extensive craft cocktail program. According to the restaurant’s website, Grazia blends Italian culinary traditions with Gulf Coast influences and Texas hospitality, creating a dining experience that balances comfort with elevated flavors.
Hembree said choosing Fort Collins was an easy decision after spending time in the community. “Over the last five years, we’ve just fallen in love with the town, the community and the downtown district,” he said.
