Biscuit Belly Acquires Jacksonville-Born Maple Street Biscuit Company Locations

The Louisville-based breakfast chain plans to convert approximately 36 restaurants over the next two years

Jacksonville-founded Maple Street Biscuit Company is entering a new chapter after Biscuit Belly recently announced plans to acquire and convert the brand’s restaurant locations.

The Louisville-based breakfast and brunch chain said it has acquired approximately 36 Maple Street Biscuit Company locations from Cracker Barrel and expects to transition the restaurants to the Biscuit Belly brand over the next 18 to 24 months.

The acquisition significantly expands Biscuit Belly’s footprint, with the company projecting it will operate more than 60 locations by the end of 2028.

Founded in Louisville in 2019, Biscuit Belly specializes in Southern-inspired breakfast and lunch offerings, including gourmet biscuit sandwiches, biscuits and gravy, breakfast cocktails and coffee. The company said the acquisition provides an opportunity to accelerate its expansion while building on Maple Street’s established locations and teams.

In a LinkedIn post announcing the acquisition, founder and CEO Chad Coulter described the deal as a major milestone in the company’s long-term vision, saying Biscuit Belly’s goal of becoming the country’s largest gourmet biscuit sandwich brand is now within reach.

Over the next 18 to 24 months, the company plans to refresh the acquired restaurants inside and out while introducing Biscuit Belly’s scratch-made menu to existing teams and communities across the Southeast, East Coast, Midwest and Texas.

Maple Street Biscuit Company was founded in Jacksonville before being acquired by Cracker Barrel in 2019. The brand has since expanded across multiple states, earning a following for its scratch-made biscuits and Southern-inspired breakfast and brunch menu.
