A Rockville storefront is preparing for a changing of the guard after nearly 20 years with the same tenant. The longtime home of Gilly’s Craft Beer & Fine Wine is trading out its bottles for pizza ovens and will be welcoming Pizza Monkey in the not-too-distant future, reports MoCo Show.
The pizzeria, which specializes in Detroit-style pies, has filed an application for alcoholic beverage license paperwork with the Montgomery County Board of License Commissioners for 2009 Chapman Avenue.
The submitted forms provide a snapshot of Pizza Monkey’s future home. The 2,125 square foot restaurant is slated to serve customers from 11:30 am to 10 pm, 7 days a week. Pizza Monkey will be offering beer and wine alongside its signature pies.
Pizza Monkey is the brainchild of Jason Hubbarth, who has been crafting the titular dish for over ten years. The pizzeria-founded in 2024-is currently operating in Corned Beef King at 330 N. Stonestreet Avenue, where it will continue to feed customers until the new location is ready.
Pizza Monkey does not yet have an official opening date for its new home, however Hubbarth is aiming to be customer-ready at some point in September. Area pizza fanatics are certain to embrace the concept; the website promises a delicious and memorable slice, saying: “We believe in using only the freshest and highest quality ingredients in our pizzas. From our homemade tomato sauce to our locally sourced vegetables to our imported authentic Detroit style doughs and cheeses, we take pride in every ingredient that goes into our pizzas.”
