A new food and beverage concept is coming to East Austin’s. According to public filings, a new concept called Valverde is planning to open at 902 E. 7th St.
The new restaurant is associated with Heaven Seven LLC. What Now Austin reached out to the LLC director, Bob Woody, who has also been involved with more than 20 locations on Austin’s Sixth Street. Woody declined to comment at this time. Details about the concept, menu, and opening timeline may be disclosed closer to the opening date.
The East 7th Street corridor is one of Austin’s most storied dining and drinking destinations, home to a dense concentration of independently owned restaurants, bars, and cultural venues that have defined the neighborhood’s character for years.
What Now Austin has previously covered openings along the same zone, including Radius, a farm-to-table concept that replaced Salt & Time at 1912 East 7th.
The address has been in motion for some time. Public records show that a permit was filed in August 2025 for a change of use from office to office/retail at the same address.
According to public filings, Woody is also involved with Two Step Taqueria’s upcoming location on San Jacinto, previously covered by What Now Austin. The new location is listed as “Coming Soon” on the brand’s website.
