A new Mexican concept plans to revolutionize quesadillas in Williamson County. According to public filings, QuesaLab plans to open its first location at 13900 W. State Highway 29, Suite 100, in Liberty Hill.
Co-owner Victor Meza told What Now Austin that the restaurant is targeting a January 2027 opening, pending permits.
Meza and his wife are based in Killeen, about 40 minutes from Liberty Hill, where their family has operated restaurants for 15 years.
QuesaLab, he said, grew out of the lessons they learned from those years in the business.
“It’s a concept based on everything we’ve dealt with in 15 years,” Meza told What Now Austin, describing QuesaLab as something between a sit-down restaurant and fast food.
“The taco is something everyone knows. I feel like the quesadilla has never really been explored that way. Quesadillas, likewise, are perfect to eat anywhere,” Meza said.
The menu centers on quesadillas reimagined with fillings not typically associated with the format. Meza pointed to concepts like a Philly cheesesteak or a McRib-style filling served inside a quesadilla instead of in their traditional forms.
“There are a lot of places for tacos, for burritos, but quesadillas are food everyone already knows. We just want to change what goes inside them,” Meza told What Now Austin.
Meza said Liberty Hill’s growth and family-oriented feel made it the right fit for the concept, particularly its proximity to residential communities.
He said the plan is to expand gradually into nearby communities, including Georgetown and Leander, before eventually moving into the greater Austin market.
QuesaLab is a family-run concept for Meza and his wife, who said they intend to maintain that identity even as the brand grows.
“We want it to stay a place that feels comfortable for families,” he told What Now Austin.
