Oso Underground Bringing New Cocktail and Dining Concept to Fort Collins

Fort Collins is getting a new spot built around good drinks, thoughtful food and a more relaxed approach to going out.

The Oso Underground will be opening at 135 West Oak Street in downtown Fort Collins. Owners Mike Goveia and Audrey Bolton, who have worked in the hospitality industry for many years, are now developing an establishment that is influenced by what they have experienced during all those years of hard work.

The couple recently introduced Oso Underground on social media, describing it as the kind of place they have always enjoyed, low-lit, welcoming and without much pretense. It will offer the combination of molecular cocktails and fine dining in an informal atmosphere.

The name itself has a personal connection. ‘Oso’ is a nod to the couple’s 13-year-old Pyrenees/Lab named Monte-Oso, who has been part of their lives through the ups and downs of working in the industry.

‘Underground’, meanwhile, reflects the couple’s interest in ideas and techniques that sit outside the mainstream, including mixology, food, music and art.

The owners say their goal is to create a place where people can simply settle in and enjoy themselves, while also supporting the people who work in the hospitality industry.

An opening date has not yet been announced. The business is sharing updates on its Instagram page.
