A Southern breakfast and brunch chain for breakfast lovers, with a growing Texas presence, is coming to Round Rock. According to public filings, Eggs Up Grill plans to open at 3200 Greenlawn Blvd., Unit 100, within the Shops at Greenlawn.
What Now Dallas spoke to the franchisee behind the project, Michael Boselah, who confirmed that an opening is targeted for January 2027. Boselah told What Now that future locations in Liberty Hill or Georgetown are also in the plans.
Eggs Up Grill is a South Carolina-based breakfast, brunch, and lunch chain. The brand serves freshly prepared egg dishes, pancakes, waffles, omelets, benedicts, and lunch staples in a diner-style environment, open daily from 6 a.m. to 2 p.m.
Boselah is a multi-unit franchisee who said his decision to partner with Eggs Up Grill came down to a genuine reason: his love for breakfast. “I like breakfast, and I like their concept, their image and their food,” he told What Now Dallas.
The concept has built a loyal following for its consistent quality, friendly service, and accessible price point. The Greenlawn Boulevard corridor in Round Rock has emerged as one of the city’s most active retail destinations, anchored by Target and a growing mix of dining and service concepts.
The location places Eggs Up Grill in a high-traffic area well-positioned to serve Round Rock’s dense residential base and a steady flow of commuters along the SH 45 and I-35 corridors. What Now Austin has previously covered the brand’s Austin-area expansion, noting an earlier filing at Manor Crossing, that did not ultimately move forward.
