Tia’s Taco Hut is planning a new restaurant in Schertz, with a 2,500-square-foot build-out planned at 4721 Roy Richards Dr., Suite 101, according to Texas Department of Licensing and Regulation (TDLR) project records.
The project, listed under TDLR number TABS2027001342, calls for the first-time finish-out of a new restaurant at the Forest Ridge Commercial Lot 50 development. The scope of work includes the construction of interior partition walls and mechanical, electrical and plumbing (MEP) work.
The project has an estimated construction cost of $250,000 and is privately funded on private land for private use. According to the TDLR filing, the private funds are not being provided by the tenant.
Construction is scheduled to begin October 30, 2026, with completion expected by March 26, 2027.
FM 3009/Wiederstein Retail Ltd. is listed as the property owner, with Phillip Pfeiffer identified as the owner’s contact. Robert Leija is listed as the person filing the project, while Stephen A. Meyer is identified as the registered accessibility specialist.
Benny Costello is listed as the tenant contact in the TDLR records.
Tia’s Taco Hut is a San Antonio-based Tex-Mex restaurant chain operated by Benny and Lisa Costello. The concept serves a broad menu of Tex-Mex and American favorites, including breakfast tacos, tacos, enchiladas, fajitas, nachos, tortas, burgers and other dishes. The restaurant currently operates locations throughout the San Antonio area, as well as a location in New Braunfels.
The upcoming Schertz restaurant will occupy approximately 2,500 square feet. The TDLR filing does not provide additional details about the restaurant’s planned menu, design or whether the location will have any features that differ from existing Tia’s Taco Hut restaurants.
The project is currently listed as registered with TDLR. Construction is expected to continue through March 2027, although an exact opening date for the new restaurant has not been announced.
