Murfreesboro’s Maple Street Biscuit Company at 1191 Medical Center Pkwy, will transition to Biscuit Belly as part of the Louisville-based breakfast brand’s acquisition of 34 Maple Street locations. The conversion timeline for the Murfreesboro restaurant has not yet been announced, although Biscuit Belly says the acquired restaurants will transition over the next 18 to 24 months. The Murfreesboro Pulse first reported the upcoming change locally.
Biscuit Belly currently operates 15 restaurants and expects the acquisition to bring its footprint to more than 60 locations by the end of 2028. According to the company, conversions began with locations in the greater Cincinnati and Richmond, Virginia, markets, with additional restaurants transitioning as the integration moves forward.
According to The Murfreesboro Pulse, the restaurant will take on Biscuit Belly’s fast-casual breakfast and brunch concept, centered around scratch-made biscuits and Southern-inspired dishes. The menu includes biscuit sandwiches, Bonuts, Loaded Breakfast Tots, Fried Green Tomatoes, Pancake Corn Dogs, buttermilk fried chicken, biscuits and gravy, biscuit Benedict dishes, coffee and boozy brunch beverages.
Biscuit Belly was founded in Louisville in 2019 by Chad and Lauren Coulter and has grown across the Southeast since opening its first restaurant. The company says the Maple Street acquisition will allow it to expand more quickly by taking over established restaurant locations and teams rather than building an entirely new footprint.
For Murfreesboro diners, the transition means the Medical Center Parkway restaurant will eventually trade its Maple Street identity for Biscuit Belly’s colorful branding and biscuit-focused menu. Biscuit Belly has listed Murfreesboro as a location with a conversion date still to be determined
