Hola Cabrito plans to open a location at 888 N. First Ave., Suite 114, in Phoenix, according to a pending restaurant liquor license application filed with the Arizona Department of Liquor Licenses and Control.
Plans call for a 3,031-square-foot restaurant with a main dining room, high-top seating, a service bar, kitchen, liquor storage, and an outdoor patio.
The application states that renovations are underway and lists November 15, 2026, as the estimated completion date. An opening date has not yet been announced.
Hola Cabrito’s South Phoenix restaurant at 4835 S. 16th St. has remained closed since a fire damaged the property on December 31, 2025. Its Instagram profile lists the location as temporarily closed, and the company has not said whether the First Avenue restaurant is intended as a replacement or an additional location.
Owner Maria Lopez has served birria in Phoenix since 2011, using a recipe she learned from her mother in León, Guanajuato. She now runs Hola Cabrito with her daughter, Valeria Lopez.
Hola Cabrito specializes in Guanajuato-style goat birria. The meat is marinated with a family adobo recipe and slow-cooked for up to eight hours, then served in broth or in tacos, tortas, and quesadillas. The menu also includes beef and vegan birria, burritos, tamales, and handmade corn tortillas.
