Kyoto Sushi and Hibachi Planning Redmond Restaurant

The new Japanese restaurant would be along the city’s main highway.

Kyoto Sushi and Hibachi is planning to open a new restaurant at 1362 S. Highway 97 in Redmond, bringing a sushi and hibachi menu to Central Oregon. The restaurant is owned by Qiancheng Su, and a liquor license application has been filed for the location.

As the name suggests, the restaurant is expected to combine two Japanese dining styles. Sushi is typically served as rolls, nigiri and sashimi, while hibachi restaurants cook steak, chicken, shrimp and vegetables on a flat-top grill, usually served with fried rice and sides. The format is popular for family dinners, group outings and celebrations, and many hibachi restaurants cook the meal in front of guests.

The restaurant is on South Highway 97, Redmond’s main north-south road. The highway carries traffic through the city and connects it to Bend to the south and Madras to the north, and it is lined with shopping centers, restaurants and services.

Redmond is in Deschutes County and is one of Central Oregon’s fastest-growing cities. It is home to the Redmond Municipal Airport, the region’s busiest commercial airport, and the Deschutes County Fair & Expo Center, which hosts the county fair and events throughout the year.
